BBQ Chicken Bombs for a weeknight dinner win!

Y’all I have no idea where this week has gone, it’s already Wednesday! This has been one of those weeks that seems like the days have all flown by. We’ve been trying to be better about not getting takeout every night and with a almost 4 year old, it’s been a struggle. My husband and daughter are both fairly picky eaters and that makes it even more challenging to cook dinner at home. Even with these two being picky I like to think I’ve done pretty well at cooking things they’ll both eat, however I feel like I’m starting to run out of recipes. So, I also feel like this recipe deserves a little a little bit of a explanation, recently I hosted a virtual Pampered Chef party for my friend, Kristen. Now, I’m a HUGE fan of PC, so helping out a friend by hosting a party was just a win-win thing. I did well enough with my party that I was able to get the deluxe air fryer and let me tell you… this thing does it ALL! It’s THE most amazing appliance I’ve ever used, it air fries (obviously), bakes, dehydrates, rotisseries, reheats and it is amazing. So, since I’ve gotten it I’ve been a little obsessed with cooking things in it… like, to the point I even made some apple chips yesterday. In my obsession and excitement I ordered a whole chicken with my groceries so I could use the rotisserie function in my air fryer (because, why not). Also, just so you know, I’m aware how ridiculous that sounds, but, it’s true. Anyway, I cooked my chicken today and it was amazing, it cooked evenly, it was juicy, it had the perfect, crispy skin and it fell off the bone! I let my hubby pick how I used it either in a pasta or these bbq chicken bombs, he picked these and I am SO glad he did! When I was mixing these up, I was so anxious to see how they would turn out and the answer is AMAZING. We absolutely LOVED this recipe and I’m sure you will too!! Here it goes!

BBQ Chicken Bombs

Ingredients

2 cups of pulled rotisserie chicken

1 cup shredded cheddar cheese

2 tbsp chopped green onions

1/2 cup of honey bbq sauce

1/2 tsp salt

1/2 tsp pepper

1/2 tsp garlic powder

1/4 tsp lemon pepper seasoning

2 packages of crescent roll dough

Instructions

In a mixing bowl, combine the chicken, cheese, green onions, bbq sauce, and seasonings, stir and until combined.

with a spoon, fill each of the crescent roll triangles with some of the chicken mixture and seal up the edges to form a ball.

Bake at 390 F for 15 minutes and enjoy! I served mine with some ranch dressing and they were fantastic!
