Y’all…. Fall is finally here and I for one couldn’t be more excited about it! Fall means it’s time for crock pot meals, soups, stews and my favorite, chili! Now, I’ve always liked white chicken chili but i never really tried to make it myself. So I made this batch and it was fantastic! I looked up some recipes on pinterest and tried to find one that had what I wanted in it already. When I failed at finding one that had everything I made up my own version and it actually turned out GREAT! This chili has the perfect amount of spice and warmth, mixed with the right amount of heartiness to satisfy all the things you want from a chili! I’m actually surprised that it turned out as well as it did. I rarely go with a recipe on the first try but I think this one is a keeper!! It also passes the test of being able to throw it together while trying to wrestle or referee your kiddos! I served mine with an iron skillet full of pone biscuits (recipe to come) and it was just perfect! It was so good that I actually forgot to get a ‘pretty’ picture of it all put together and looking nice, but, if you make it for yourself you’ll see what I mean! Here it goes!
White Chicken Chili
Ingredients;
2 pounds of chicken tenderloins chopped into 1” pieces
2 packets of McCormick white chicken chili seasoning
2 small cans of diced green chilis (I used the mild)
2 cans of pinto beans (drained)
32 ounces of chicken broth or 3 tbsp chicken bullion dissolved in 32 oz of water
1 can of white shoepeg corn (I use the green giant brand)
1 8oz block of cream cheese
Instructions;
Start by adding the broth and the chicken to your crockpot
Add the seasoning packets and stir to combine
Add the green chilis, beans, and corn and stir
Place the whole block of cream cheese in the center of the crockpot and put the lid on
Cook on high for 4-5 hours or on low for 8 hours
Once everything is cooked, stir to combine cream cheese
Serve with cheese if desired
